Eric turned out to be not only a great chef but an instant friend, on whom I can call with all manner of cooking questions. My lesson was great fun, calibrated to my level and consisting of achieveable goals that I have replicated with success on my own. I love Eric's on-site recipes and have passed his name to countless friends who want to add a real star to their list of contacts in Paris. Thanks, Eric

To celebrate my birthday, I traveled to Paris with several family members. We rented an apartment through www.feelslikehomeinParis.com. While perusing the website, I noticed a link for cooking lessons. Mmmm, I thought, that would be a great treat for all of us. Chef Eric and I emailed each other to plan the menu. He devised a terrific menu based on our various likes/dislikes, allergies, etc. With four women, finding food that would satisfy all can be challenging! Chef Eric recommended a traditional Bouillabaisse preceded by a crab salad (with wine pairing, bien sur!), followed by a simple desert of fresh strawberries tossed with aged balsamic vinaigrette and served with vanilla ice cream. On the day of our class, Chef Eric showed up at our apartment with all necessary items for the meal. He even provided chef’s jackets so we looked professional. We had an extremely enjoyable morning in the kitchen – lots of laughter and we learned so much. But the best part – eating the results!

Eric, Thanks for the recipes, I'll be using them next month when I make lunch for a girlfriend and her busband. I enjoyed the cooking class immensely and though the best way to thank you is to offer this testimonial that you can use on your web site or promotional materials.
"The pleasurable experience of cooking with Chef Eric Fraudeau renewed itself the day after I returned from Paris as I was shopping at my neighborhood grocery market. I discovered "mache" (described as Lamb's lettuce), an ingredient we used to make the White Asparagus Salad with Citrus and Coriander Dressing. The three-course lunch, featuring Poulet Grand-Mere, was sumptuous. Eric's tutorial of me as engaged student was patient yet informative. Most enjoyable was Eric as host and ambassador of French cuisine and culture. The best tribute, I hope, is my goal to re-create this splendid vacation experience for friends and family. They are vying for lunch dates!"

More, more, more. It was a great experience leap of faith to book a private cooking class on the other side of the world sight unseen. But after taking the leap and contacting Eric,  we found his obliging emails conforting and encourging. We definitely needed a tutor who could speak to us in English as our French is very basic tourist speak. We met Eric at a delectable market, selected the ingredients for our meal and were then treated to his simple and stylish tuition in the kitchen. We learnt, laughed and indulged in gret wholesome French food and wine with Eric. GO ERIC GO. Loved it. Bon apetit.

Let me thank you, once again, for such an enriching cooking experience. Even, I, who is French and from a long line of great cooks, learned so much from you from the marketing to planning the menu to picking the wine to the preparation. We all left feeling "the joy of cooking" not to mention the joy of eating it all. The pairing of wine with the different courses was also very enlightening. Your class was a great way to spend a day and finish it off in Montmarte and Sacre Coeur. I would recommend that anyone visiting Paris not miss the experience of sharing a kitchen and a meal with you. I would also say that this is not "just for women", and although a bit reluctant, Roy, Dave and Hugh truly enjoyed themselves especially the eating! It was the best meal we ate in Paris!!!

Thanks for the recipes!

Just a follow-up on last Sunday's class.

Paula & I as well as Sue and Connie had a great time. We enjoyed the overall experience: shopping, cooking and instruction, eating. drinking and the overall group dynamics. It was great fun, and we anxiously await the arrival of the receipts etc. so we can try the meal again.

Thanks again for the good morning and we look forward to hearing from you soon.

We took part in the morning cooking experience led by Chef Eric in Paris, and found it to be a real delight. He was very accommodating to the varied likes and dislikes of the class members, and thus we collectively came up with a lovely menu while we stood at the metro stop near his school. Our shopping experience at the fresh food markets in the neighborhood was unlike any we had enjoyed before, and Eric was very helpful in teaching us how to make good food selections in a French market. The class itself was partly a cooking lesson and partly a social interaction with a fun group of people. We had a blast, ate a divine meal, and learned a little bit along the way. Plus we now have several recipes to add to our toolkit. We would highly recommend this class to anyone who loves to cook, loves to eat or just loves to meet great people.

I'm writing to say how much my family and I enjoyed ourselves at the cooking class. Your relaxed manner and the easy pace made the experience a lot of fun. I particularly appreciated that we could invite my husband for the lunch so he could be part of the experience. Can you please forward the recipe handout you promised. My son and his girlfriend have returned to New York and are excited about duplicating some of what we made. Best regards,
